I remember that in Shadow of the Almighty. Such a wonderful gem of literature.

I had a similar moment today while driving. The sunbeams were bursting through gray and rain-heavy clouds, it was glorious. God is causing the sun to shine and the light was piercing through the darkness. It was phenomenal. I was in awe even as I was traveling at high speeds.

Oh my goodness! That places looks amazingly beautiful! As do you! I like the light hair on you, it was cute! Of course your dark hair looks great on you too. On our anniversary my husband and I went to Hawaii and we did a little snorkeling day trip and I TOTALLY got sick too! Definitely threw up off the back of the boat. Love this. Eating healthy is not only better for you, but it’s so much more rewarding! :) I love how much more energetic I feel when I eat fresh fruits and vegetables, and good healthy meals. :)

Like you, I’m still learning to cook good meals for 2 (and to cook in general). My personal go to has been chicken with green beans. I put olive oil and garlic salt on both and it’s delicious. Recently, I found I really love cut up zucchini or squash cooked over the stove with some olive oil and whatever spices/seasonings we have in the cabinet.

I was just getting used to cooking for two but now that I can’t eat gluten it’s difficult again lol we don’t have any produce stands where we live so when we buy our fruit and veggies, it’s still expensive but it’s worth it.
I buy lots of veggies frozen and in the steam bags. They taste good to us. But of course fresh corn on the cob is the best!!
Orange chicken is my hubby’s dinner he makes. Just a jar of orange marmalade mixed with a 1/2 teaspoon of curry poured over chicken. Bake for one hour at 350. Serve with white rice and green beans. :-) soo easy and so good.
P.s. you make the food you photograph look so good! Lol

This is so cool! Steven and I just decided last week that we wanted to start living a vegetarian lifestyle. Mainly to loose weight and put good ingredients into out bodies, but also to save on our budget. It is surprising to me how simply not putting meats in the cart saves when we reach the register.
So far my favorite simple recipes have been:
1) pad thai noodles, steamed broccoli, walnuts, some teryaki, and truvia to sweeten. Thats it! Sometimes I have an apple or strawberries for dessert.
2) wild rice, pan friend zuccini, and a mixture of spices. We usually use coconut oil to fry in. Some pepper and garlic powder. I’m thinking of adding sesame seeds next time.
3) meatless minestrone: this is out catch all, eat for days meal. When it’s time to use veggies that might go bad soon, they go in the pot! I just use vegetable stock and crushed tomatoes then add everything else in. Ususally we love carrot, celery, tomato, onion, zuccini, yellow squash. Top with cheese and let it melt. SO GOOD! And it makes a big batch. Perfect for when I need something to take to work and don’t have time to prepare it the night before. It usually gives us about three to four meals each.

I am SO BAD at eating healthy! Part of it lately is because I’ve been CRAZY BUSY and have been doing a lot of meals on the go. Which means running to Taco Bell to grab something as I’m running somewhere else. I’ve been trying to do a few more healthy things, like going to our local Smoothie King because their smoothies are ALL FRESH FRUIT and they can add dietary supplements. So those are good for when I need something quick, filling, and healthy. But beyond that – it’s been bad. But it’s also hard because I’m cooking just for myself. I already don’t enjoy cooking because I’m not good at it, so when I’m all “well, it’s just me…” so I don’t get motivated to put together healthy meals. I do know my town is opening up their farmers market though! I should probably go there to get some fruit and such and use those for snacks – because I have a nutella addiction too!

I’ve been trying to eat healthy and I’ve been surprised by a)how quickly I’ve stopped craving junk food and b) how easy it is to go from 2 or 3 fruit and veg a day to 7 or 8!

I’ve started having fruit with my morning cereal (banana, blueberries and sultanas) and also a glass of juice…that’s already three or four fruits down!

I LOVE to cook healthy meals! My neighbor is actually a raw food chef of sorts that actually has some clients that she prepares menus and meals for once a week and I help with that sometimes too. It’s fun! Not sure if you have ever heard of the Daniel fast, but you might want to check that out. Trav and I did it about two years ago and it’s awesome. I would love to do it again some time actually. I also have a magazine that I LOVE called Clean Eating. It’s all about, well, “clean” foods–stuff that’s good for you and doesn’t have preservatives and other nasty junk…OK, I’m kinda a ‘foodie’ I’ll stop rambling! :)

Your blog is so versatile! I really liked this post. We had been in a not-so-healthy eating rut, too. We were shopping in bulk every two to three weeks, trying to buy a lot of produce, but finding that a good deal of it spoiled before we could eat it all. Picking up fresh greens, fruits, and vegetables once per week really is the trick, like you said! :) Now that I have a full-time job with a predictable schedule, I’m slowly getting better at planning meals. It really does take practice!

Jennifer, this was a great post.
I feel that God is really impressing upon our hearts to get out there, be in this world, the world that was originally his perfect kingdom, and be active. I loved this: “Stop looking at the competition!” It’s so true. I used to say I looked at every photographer for inspiration but it didn’t inspire rather it made me feel worse about myself.
I have to sit down, cut out what I don’t need to look at, keep what is valuable to this life God has given me and stick with it. It’s ok if I’m in the dark about some blogger’s life. I need to be ok with it :)
progress and doing all things with excellence is far more important than perfection !

Jen, I so agree with you on the social media thing. I recently took the Facebook app off my phone altogether, because every time I looked at it on my phone I had this nagging feeling that I was wasting time. Now I only check in on FB once or twice a day from my computer and I love it! I keep Twitter on my phone, but I only follow about 40 people. I don’t need to know what everyone, everywhere is doing all day long. If sweet followers send me a message, I’ll always try to message them back, but I don’t need to follow each and every one of them.

this has GOT to be one of my most favorite posts from you, by far.

It is sooo easy for us to get side-tracked and lose sight of what truly matters – our relationship with our Creator. Working towards eliminating all distractions takes strength and courage, but is well worth it. I love your little list at the end. I will be taking the challenge, and also creating a list of things that ‘fire’ me up, as well (thanks to this post). Oh, and I too, also “gutted” my social media sites recently – limiting them down to two. Blogging + Instagram.

Amen to this! Yes we all just need to zoom out from time to time, well in the blogging world more than not, and realize ALL GLORY IS TO GOD and this life on earth is FOR HIS KINGDOM it’s not for us at all but for Him. Serving Him and His people and being so engulfed in blogging etc..that can get lost and we can spend less time with God…at least that is what I am experiencing now, 6 months into it, and I DO NOT want to lose sight of the one that ABIDES in me and I in Him. NO way! So I may need to make some sacrifices…
